...but, I thought it looked interesting.




INGREDIENTS:

  • 12 1-oz slices deli-fresh, all-natural, low-sodium turkey breast
  • 1/2 cup shredded low-fat old cheddar cheese, divided
  • 1/4 cup finely chopped green onion
  • 12 eggs
  • Fresh ground pepper to taste

INSTRUCTIONS:

  1. Preheat oven to 400°F.
  2. Cut parchment paper into 12 4-inch squares. Arrange 1 piece of parchment in each of 12 muffin cups. 
  3. Place 1 slice of turkey breast over of parchment in each cup, using fingers to line cups with turkey. Divide cheese and onion evenly among cups, then break 1 egg into each. Sprinkle evenly with pepper.
  4. Bake on middle rack of oven for 18 to 20 minutes, depending on desired firmness of yoke.

B.O.O.B.s--Museum & Culture Day

Hi everyone!

I posted about this previously, but thought I'd do a follow up to see if anyone is interested in joining me.

Chicago has a ton of great museums!  One that I am especially interested in is the Museum of Science & Industry which is near the University just south of the city.  Frank Lloyd Wright's Robie House also is in the general vicinity.

Tina & I plan to take a day to do some exploring in that part of town.  It won't be an official "tour" or anything like that, but we could all meet & travel together!  If something like this interests you, make a comment or send me an email (justlynda [at] gmail [dot] com) and I'll see about getting something organized.  Make sure you put BOOBs in the subject line so it won't go to spam.

If there is enough interest, we could try to arrange a more formal Group Tour of two of Frank Lloyd Wrights buildings in Chicago.  Lemme know...

i don't understand, but i'll take it anyway...

Still not much weight loss...holding steady @ 209 for MONTHS!  But, yesterday I went bathing suit shopping and was very solidly in a 14.  I also bought a pair of 14 capris.  That's not to say that I'm a 14 now--most of the pants I tried in 14 were too small (but, I was able to get them on and zipped).  Since I'm not really losing, I measured myself today and guess what?--1/2" down on both waist & hips.  How does that happen?

Also...I have a fill scheduled for Monday!  I met with doc last week and he thinks that I need a tad more.  I am not always hungry, but I do feel like a bottomless pit at least twice a week.  We looked over my history, and he mentioned that I am a bit behind--not just with weight loss but also with the number of fills (blame it on my original doctor who only filled me twice in the first 6 months).  

This time, he will fill me until it seems "perfect" and then take a little back out in order to [hopefully] avoid the swelling issues I've had which have let to un-fills the last few times. I'm also going to try Jenny's trick of loading up on Ibuprofen a day or two before.  I'm a little nervous about the timing since we're leaving for vacation the day after the fill...keep your fingers crossed for me.

Although I have been WAY more active this last month, I'm still not doing any "formal" exercise.  Maybe that has something to do with the weight loss stall---ya think?

booked for boobs...

Tina (Losing It!) & I are indulging in some luxury for this year's BOOBs in Chicago.  We just booked our room @ The James (right across the street from the the Sheraton).  They are running a special--stay 4 nights for the price of 3.  Lucky for us, we had already planned to stay 4 nights!

Texas, here I come...

I am super excited!!!  We are getting a new car!  It's in Houston and we will be flying there on Saturday to pick it up and drive it back to ATL.

I also will get to see my oldest friend from the 1st grade who lives just north of Dallas. The last time I saw her was in 1984!
