my new favorite lunch...

A few days ago, I posted this recipe from the American Heart Association.  Since then, I've tried a few other variations, and all have been quite yummy!  I tried canned salmon instead of tuna...yummy.  I tried red-wine vinegar instead of balsamic...yummy.  I tried smoked salmon...yummy.  Dill instead of basil...yummy.

This is an amazing basic recipe that can be tweaked with just about any combination of things that you have on hand (or leftover from other recipes).  It's easy to portion into 1-cup containers; it's soft enough that you can eat it on even your tightest days; it has oodles of protein; and...it's amazingly filling!

As a side note, I've been making quite a few of the recipes from various American Heart Association cookbooks and have been very impressed with the results!
