eat more fish...

One of my new healthy eating goals is to have 1 fish and 1 vegetarian dinner each week.  Tonight I'm making tacos for my Mom's 75th birthday (she loves tacos).  But, tomorrow night I plan to make this:



I bought the halibut yesterday from the Farmer's Market and everything else is already in the pantry.  I'll let you know how it turns out.

i love fish! We eat aton of it at our house. mostly salmon. Good stuff.

My husband and I have some sort of seafood at least once a week. Tilapia is always on sale at Publix and baked/broiled with a little melted butter and Grill Mates seasoning sprinkled on top is wonderful. I serve it with couscous and spinach. Flounder and grouper (if it is on sale) is also delicious too...I have a recipe for a parmeasan grouper that is to die for!

It all sounds wonderful. I actually love fish and used to cook it a lot (salmon, halibut, sea bass, cod, flounder, scallops, etc). But, Darrell isn't a fan, so I stopped. He has agreed to do it if it is important to me. And, he understands about the health benefits, too.
