You may remember this post when I was so excited about trying this recipe for Honey-Sesame Tempeh from Eating Well magazine. Well, I finally got around to making it yesterday and it was...disgusting!
Maybe I just don't like tempeh. It has sort of a rancid-nut undertone. But, I also didn't care much for the carrot slaw. Too much vinegar? The recipe didn't specify seasoned rice-vinegar, so I used plain. It was just too sour! I tried adding a bit of sweetener (thinking that perhaps I should have used seasoned rice-vinegar) and it helped a little, but not enough. The entire dish was just a bit...off. And sour. And yucky. It looks pretty, though.

In other news, I had my cholesterol checked last week and it's down to 147!!! Back in September, I was disappointed to discover that, after losing 20+ pounds, my cholesterol had actually increased to 224. I was put on Zocor. It was about this time that I really started focusing on my vitamins/supplements and I started taking the MegaRed krill oil (similar to fish oil) and added flax meal to my smoothies.
Despite the improvement, I have to stay on the statins for a few more months before the doc will re-evaluate. She says it's possible that she'll get me off of them by the end of the year to see how I can do on my own with just diet & supplements.
Other good news: I am no longer considered "pre-diabetic." My fasting blood sugar levels have gone from 99 (pre-surgery) to 90. AND...my blood pressure was down to its lowest ever...105/65!

Great news Lynda! Really good news! I hope my blood sugar is down..I do blood work next week! Do you take meds for your blood sugar? I can't remember!
As for tempeh...It is just one of those things that I just don't love. I do like it better then tofu. But that is a texture issue with me not a taste. There are a few sandwiches that I like with tempeh but few and far between!
Sucks when you put so much time and effort into a dish and it turns out BLAH! Been there, done that! On to the next...

Amanda--I don't take anything for blood sugar. That progress was all me! (one of the reasons I'm so proud of it).
I actually like tofu most of the time and even cook with it on a semi-regular basis. I especially like the Wildwood Organics Baked Terriyaki with a slice of avocado...yum!
Lynda, the NSVs are great because they truly reflect that you are getting healthier. I'm truly glad that your efforts are improving your health directly. Prolonging your life...what can be better than that!!
See, I don't eat eggs. And tofu reminds me of eggs. I am all about meatless and my veggies..but eggs are a no go. Since I was a baby! My mom has stories! :) But anything is good with a slice of avocado.
Well perhaps we should do a real food bandster meet up. Might just be you and me because it seems that everyone that lives in our "area" is still like 3-5 hours away! Wow.
Lets pick a date.
Can I say that those cords were a real confidence booster for me. I was so scared to try them on!
