Background: Every other year my sister & her partner spend Christmas in North Georgia with the in-laws. When that happens, my family generally celebrates a few days early so that we can all be together. This was one of those years.

My former cooktop was a 4-burner electric and original to the house (built in 1977). My most amazing husband bought me this professional series 5-burner gas cooktop and had the gas-line run to the kitchen and the cooktop installed this morning (while I was out at a doctor's appointment).
Of course, I ran right out to the grocery store and bought a brisket! I don't know why I bought a brisket. I've never eaten brisket. And, I've certainly never cooked brisket. But, as soon as I saw the unit installed, I thought to myself "I should go get a brisket!" It just seemed like the right thing to do. It's currently simmering away on my handy ultra-low simmer setting and will hopefully be edible by 7:30.
I'm using a modified version of this Crock-Pot Coffee Braised Brisket recipe from Real Simple Magazine.

that is the most wonderful Christmas present!! And to have it installed! Lucky duck! I got one as well! My is a prof. series with a convection oven and 5 burners as well! I am so excited as our stove is from 1982. Chris got to see it yesterday but it won't be installed till after Christmas because we have to get new counter tops as well...Brisket! Fabulous choice. I was watching Arti on the food network make a beer braised brisket on Sunday and have been in the mood! perhaps it can be a "soft" food that I can have soon! Merry Christmas Lynda!
