A few things you may need to know about me:
- I love to cook.
- I love to try new things.
- I love duck.
A well prepared piece of duck is one of the most incredible things you could ever put in your mouth (no giggling here...this is a serious post). It is meaty (like beef) and prepared properly is oh-so-moist with such a rich flavor! An, it goes so well with Fall root vegetables & wild rice. Mmmmmm...
Unfortunately, ordering duck in a restaurant is very much a hit-or-miss endeavor. I had one of the most disappointing experiences with duck at one of the best restaurants in Atlanta. I also had one of the best duck dishes EVAR at a little French bistro just outside of the Highlands.
One would assume that it is difficult to cook...but all the cookbooks and magazines say it is easy if you know the right technique. Apparently, most of the chefs in the US do not know this technique. But, I digress.
The point of this post is that I love duck! AND, I am cooking it!! For the first time ever!!! In my own kitchen!!!! Tonight!!!!!

I feel the same way about lamb and have had the same hit or miss experience. I haven't gotten to experience duck though for that same hit or miss reason.
Oh Lynda I love duck, I grew up eating it! In fact we would have duck on Thanksgiving many times, because we all loved it so much!
I do not find it difficult to cook at all, and it does depend on the DUCK! LOL
